This is a spicy fried potatoes recipe with a Cajun flare. The recipe calls for using an Air Fryer, but they can be oven roasted just as easily. Also, I usually peel the potatoes but not always, kinda depends on the potato, there are a lot of good vitamins and minerals in the skins but we all know where they’ve been.
Ingredients
- 1 lb Potatoes – doesn’t matter which kind, play
- 1 tsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Italian seasoning
- 1 tsp Cajun seasoning
- 1 tsp Kosher salt and then to taste
- 0.5 tsp Black pepper and then to taste

- Parsley
- Parmesan – grated
Process
- Mise en Place: Measure and prepare the ingredients prior to staring.
- Peel potatoes and cut in 1″ cubes.
- Soak in cold water for at least 10 mins (1 hr is better) to remove starches.
- Rinse in colander and let dry briefly. Can pat dry with paper towels if in a hurry.
- Mix all the dry ingredients together.
- Put potatoes in a plastic bag – I use a used produce bag from the store.
- Add oil and shake to coat potatoes.
- Add dry mix and and again shake to coat the potatoes.
- Place in Air Fryer basket and cook at the French Fry level (20 mins at 400 F)
- Every 5 mins, remove basket and toss potatoes to get an even bake.
- Cook until golden brown and tender – may take more time.
- Garnish with optional parsley and Parmesan.
Note: To oven roast, set oven to 400 F (425 F conventional). At step 9 above, put potatoes in a foil lined roasting pan and roast for 45 – 60 mins in oven or until potatoes are toasted and tender.
