Pineapple Pecan Cheese Ball

A perennial party favorite. Serve with cracker or freshly backed begets. You will want to make this the night before your party so it has a chance to firm up. I like to use half of a freshly cut pineapple, but you can also use a can of crushed pineapple (drained), but try to get it light syrup.

Ingredients

  • 2 – 8 oz Cream Cheese packages – softened
  • 1/2 Fresh Pineapple – sliced then cut into small pieces
  • 1/2 cup Green Pepper – peeled and diced fine
  • 1/2 cup Green Onion – chopped fine
  • 1 tsp Lemon-pepper seasoning
  • 1 tsp Salt – fine sea salt is best
  • 2 cups Pecans – chopped – divided
  • Assorted crackers or sliced beget

Process

  1. Mise en Place – measure and prepare ingredients prior to starting.
  2. In large bowl, beat softened cream cheese until smooth. If using a mixer, use a low speed (#2) and the stirring attachment.
  3. Mix in drained pineapple, peppers, onions, seasoning and 0.5 cups pecans.
  4. Place on sheet of film and use the film to shape into a ball.
  5. Refrigerate overnight.
  6. Before serving, roll ball in remaining pecans to full coat the outer surface.
