This appetizer is served on toothpicks, which makes it a nice bite to put out during the happy hour of your dinner party. It combines two things people not only love, but that go well with drinking, pineapple and Kielbasa. Takes about 15 mins to assemble and 15 mins to bake. Yields ~20.
Ingredients
- 1 Pineapple – sliced & cut into 1″ wedges (or 20 oz can)
- 2 Red, Green, or Yellow Bell Peppers – cut into 1″ cubes
- 1 lb Kielbasa – sliced into 1/2″ thick slices
- 3 oz. Hawaiian BBQ sauce (or any BBQ sauce)
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Preheat oven to 425 F (220 C).
- Line baking pan with foil and coat with cooking spray
- Assemble servings:
- Place 1 pineapple chunk on toothpick, followed by a bell pepper cube and a Kielbasa slice.
- Repeat for all pieces
- Arrange servings on baking pan and make 15 mins.
