This is a quick and simple way to make a healthy and tasty snack packed with sustainable energy rather than the sugar spike you get from commercial granola.
Ingredients
- 365 g Old Fashion Oats ~4 cups
- 100 g Coconut oil – virgin ~0.5 cups
- 75 g Honey ~0.25 cups
- 75 g Maple syrup ~0.25 cups
- 75 g Pecans ~0.5 cups
- 75 g Seed – Pumpkin, sunflower ~0.5 cups
- 56 g Walnuts ~0.5 cups
- 56 g Sliced Almonds ~0.5 cups
- 1 tsp Sea salt – fine grain
- 1 tsp Vanilla extract
- 0.5 tsp Cinnamon
- 0.5 tsp Cardamon
- 0.5 tsp ginger powder
- 0.5 cups Dark chocolate chips – optional
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Chop nuts into whatever size you want – or don’t chop, dealer’s choice.
- Preheat oven to 350 F.
- Roast nuts 8 mins – even if they’ve previously roasted.
- Mix oats, nuts and salt in bowl.
- Warm oil, honey, and syrup in pot until melted. Add vanilla, ginger, cardamon and cinnamon. Stir until dissolved.
- Pour oil mixture over oat mixture and toss until all the dry ingredients are coated.
- Pour contents on a lined baking sheet and spread out to an even ~1/3rd inch thickness. Pack down as you go using a flat object like a spatula.
- Back ~15 min (fan) or 20 min conventional or until granola gets a nice brown top without burning.
- Let cool down at least 30 mins.
- Cut or crack into desired sizes and store in an airtight container.
- Granola will keep longer if you store in the fridge even though none of the ingredients require refrigerated storage.
