Vegetable Cabbage Soup with White Beans

A quick soup from scratch that is healthy and easy to make. It has a large ingredient list, which is how you know it’s good. This recipe is Keto friendly it you omit the beans.

Ingredients

  • 1/2 Head of cabbage – chopped
  • 32 oz Chicken broth (4 cups)
  • 16 oz Water (2 cups)
  • 15 oz Can of fire-roasted tomatoes – chopped
  • 15 oz Can of white beans – drained
  • 1 Onion – diced
  • 2 Carrots – chopped
  • 2 Celery stalks – minced
  • 2 Garlic cloves – minced
  • 2 TBL Olive Oil
  • 1 tsp Thyme leaves – dried
  • 0.5 tsp Chili powder
  • Kosher salt and pepper to taste

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting
  2. Heat cast iron Dutch oven at Med. Once hot, add oil and let warm.
  3. Add onion, carrots, and celery. Season with salt, pepper, and chili. Cook ~5 mins or until onions are translucent.
  4. Stir in garlic, thyme leaves, and beans. Cook 1 min.
  5. Add broth and water and bring to boil, then reduce heat to a simmer.
  6. Stir in cabbage and tomatoes and simmer ~6 mins.
  7. Season to taste.
