Rosemary-Sesame Pecans

This snack mix has a great blend of savory spice and sweetness. It makes a great holiday treat as well as a nice energy snack on long hikes or while hunting.

Ingredients

  • 1 lb Pecan halves, ~4 cups
  • 1/4 cup Sesame seeds, ~1 oz
  • 1 cup Demerara sugar – can substitute brown sugar
  • 1 TBL Kosher salt
  • 1 TBL Minced Rosemary
  • 2 Egg whites

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Preheat oven to 300 F.
  3. Line two baking sheets with Parchment paper
  4. Whisk together sugar, salt, rosemary, and sesame seeds.
  5. Whisk egg whites until frothy. Add nuts and toss until coated.
  6. Add herbs and toss until coated.
  7. Spread nuts on the baking sheets.
  8. Bake 20-25 mins until toasted and coating is dry.
  9. Leave on baking sheets until cooled and then place in airtight container.
  10. Will last several weeks but its your call on the egg whites.
