Eggs Schiacciata

This recipe is nice way to feed a lot of people breakfast while at the same time flashing your gourmet flare. Begin by making Italian Schiacciata, which is a flat potato bread that takes about an hour but you can make it in advance. Once the bread is baked and slightly cooled, use a circle mold to cut out 3 inch disks.

To start breakfast, warm the bread, I do it on a grill but you can use a microwave. Heat up egg toppings, like ham and vegetables. Then using a circle molds, fry eggs; I light stir one egg per disk but you can leave the whole if you want the extra flare of a running yolk.

Ingredients

  • 1 Schiacciata bread disk
  • 1 egg
  • Olive oil
  • Salt and Pepper to taste
  • Topping options
    • Ham
    • Sausage
    • Vegetables
    • etc.

  1. Mise en Place – Measure and prepare your ingredients prior to starting.
  2. Heat of bread disk, can use microwave, but I use grill
  3. Cook optional toppings.
  4. Cook Egg
    1. Prep egg; whole or scrambled.*
    2. Place mold on grill and add olive oil. Let warm.
    3. Place egg in mold, add salt and pepper.
    4. Cover mold to steam top.
    5. Remove egg from mold
  5. Assemble: Place egg on top of bread and garnishing with optional toppings.

*Note – For whole eggs you don’t really need to cook in mold. You can use the mold to initially shape the egg and then remove mold finish.
