Baked Apple Oatmeal

Runners and cyclists need energy, the problem with the store bought energy bars is that they’re packed with chemicals – they say they’re not, but consider the shelf life alone and you know there’s preservatives. So, why not make your own healthy energy bars? Sounds good in theory, only every time I go to grab a bar for my Saturday long run, my kids have already eaten them all. . . so, I guess this is a great kids snack too.

Ingredients

  • 2 Apples (~1 cup) – peeled and chopped small
  • 2 cups rolled Oats
  • 14 oz Milk
  • 0.5 cup Walnuts – chopped
  • 1/3 cup light Brown sugar – packed
  • 1 Egg – at room temp
  • 3 TBL Avocado oil or melted coconut oil
  • 1 tsp ground Cinnamon
  • 1 tsp baking powder
  • 1 tsp Vanilla extract or vanilla powder
  • 0.75 tsp freshly grated Ginger – or .25 tsp ground Ginger
  • 0.5 tsp Salt
  • 1/8 tsp ground Nutmeg

Process

  1. Mise en Place – Measure and prepare your ingredients prior to starting.
  2. Preheat oven to 375 F
  3. Grease a 8×8 baking dish
  4. Toss apples with cinnamon, nutmeg and ginger.
  5. Mix oats, backing powder, salt and sugar.
  6. Whisk milk, egg, extract, and oil.
  7. Add milk mixture to oats, then stir in apples and walnuts.
  8. Pour into pan and back 35-40 mins.
  9. Let cool completely before cutting
