Tomato Slices with Parmesan, Basil and Balsamic Vinegar

This recipe is for baked tomato slices that can be served as an appetizer or side. The title pretty much says it all.

Ingredients

  • Tomatoes – sliced
  • Parmesan – grated, Mexican Cotija is a nice substitute
  • Basil – chopped
  • Balsamic Vinegar
  • Garlic – minced (optional)
  • Salt and pepper to taste

Process

  1. Preheat oven to 400 degrees F.
  2. Line a baking sheet.
  3. Place tomato slices on baking sheet.
  4. Brush with balsamic vinegar
  5. Sprinkle on the Parmesan.
  6. Top with basil.
  7. Sprinkle with salt, pepper, and minced garlic if using.
  8. Bake until cheese is melted (approximately 10 minutes).
