Tuna Salad with Tomatoes

If you like to eat a lot of salads, as I do, you sometimes need to change things up a bit. Here’s a nice salad that doubles as a Lent alternative and can either be a starter or entree.

Ingredients

  • 12 oz Albacore white tuna – drained and flaked
  • 6 oz Mayonnaise
  • 4 Tomatoes – cut into wedges
  • 0.5 cup Sweet onion – diced
  • 1 Iceberg Lettuce leaf or 4 Romano lettuce leaves
  • 1 Celery rib – chopped
  • 1 tsp parsley – chopped
  • 0.75 tsp Black pepper

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Combine all the ingredients, except the tomatoes.
  3. For 1 plate:
    1. Place iceberg lettuce leaf in center and arrange tomato wedges around that.
    2. Garnish with Parsley.
  4. For 4 plate appetizer:
    1. Place Romano lettuce leaf on a plate with 1/4th the salad mix scooped on top.
    2. Arrange 1/4th the tomatoes around the scoop.
    3. Garnish with Parsley.
