Roasted Red Pepper Sauce

This creamy red sauce can be used many different ways, as a spread, on salads, to dress up meat and fish dishes, and to garnish vegetables. The quickest way to make this is using a jar of roasted red peppers, but if you really want to make from scratch, fire roast fresh peppers on the grill.

Ingredients

  • 16 oz jar Roasted Red Peppers
  • 4 oz Heavy cream
  • 2 TBL Butter
  • 4 Garlic cloves – peeled, smashed, and diced
  • 0.5 tsp Basil – dried
  • Salt and pepper to taste

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Using mixer or food processor, puree the red peppers.
    • Add juice from jar if dry.
  3. Heat a skillet on Med and melt butter. Saute garlic ~2 mins.
  4. Add pepper puree, and basil. Salt and pepper to taste.
  5. Simmer 10 mins.
  6. Remove from heat and add cream. Mix until smooth
  7. Salt to taste
  8. Serve hot or let cool, it depends how you intend to use it.
