Cheesy Garlic Bread

Okay, so you’ve made the perfect pasta dinner, say Cacio e pepe, or spinach linguine with pesto, but now you need an equally impressive side of garlic bread. Here is how I make my cheesy garlic bread, not only is it quick and easy, it is moist and tasty. While this is a bit off from what you may be used to, give it a try and see what you think.

Ingredients

  • 1 French baguette (long loaf)
  • 1/4 cup grated Parmesan cheese
  • 4 cloves garlic – minced fine
  • 1/4 cup olive oil
  • 2 TBL mayonnaise
  • 2 tsp dried oregano
  • 1/4 tsp sage
  • 1/2 tsp sea salt (fine grain)
  • 1/4 tsp black pepper

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Preheat oven to 400 deg. F
  3. Slice bread either in half length-way to create to long pieces you can slice before serving, or a bunch of 3/4″ thick slices cut at a diagonal down the length of the loaf if you want to build individual slices.
  4. Brush the top of each bread slice with olive oil, then spread on the mayo.
  5. Mix the garlic, oregano, sage, salt & pepper together, then sprinkle evenly on each slice.
  6. Top with Parmesan cheese.
  7. Bake until cheese just starts to brown.
  8. Allow to cool before serving to insure your guests don’t burn their mouths with melting hot cheese.

Note: if you want to cheat, you can substitute garlic salt for the fresh garlic and sea salt, but be careful, garlic salt is generally very salty.
